If you've managed to avoid sampling absinthe since it made a resurgence in the cocktail scene around 2008, now is the time to get brave and sip.
The Savoy, a seafood-focused tavern that recently opened in Wicker Park, stocks more than 40 varieties of the herbal spirit. Bartender and absinthe expert Deidre Darling has focused the cocktail program to incorporate absinthe into both classic and modern cocktails. The Savoy even has several traditional absinthe fountains, used to slowly drip cold water over the sugar occasionally served with the spirit.
